There are numerous examples of my craziness and the impending severity of it, but number 876 is my inability to throw away over-ripe bananas without promising no one except myself, that I will not let that beautiful fruit go to waste and will immediately bake a lovely bread or muffin.<\/p>\n

The really crazy thing is that I don\u2019t even like bananas.<\/p>\n

But here\u2019s a bread that I will even eat, packed with all sorts of wholesome goodness.<\/p>\n

Banana-Chocolate-Chip Bread<\/strong><\/span><\/em><\/p>\n

3-4 over ripe bananas
\n1\/2 cup sugar
\n1\/2 cup brown sugar
\n1\/3 cup milk
\n1 egg
\n1 teaspoon vanilla extract
\n1 1\/2 cups flour
\n1 teaspoon salt
\n1 teaspoon baking soda
\n2\/3 cup chocolate chips<\/p>\n

1.) Preheat oven to 350\u00b0. Spray a loaf pan with nonstick cooking spray.<\/p>\n

2.) Mash bananas with a fork until smooth-ish. (Leaving some lumps is ok.)<\/p>\n

3.) In a separate bowl, mix together flour, salt and baking soda. Set aside.<\/p>\n

4.) Into the mashed bananas, whisk in sugars, milk, egg, and vanilla.<\/p>\n

5.) Gently fold in flour mixture just to combine, add chocolate chips and pour into the loaf pan.<\/p>\n

6.) Bake for 55-65 minutes until a knife blade comes out clean. (Crazy people use knives, not toothpicks.)<\/p>\n
